According to the Speciality Coffee Association (SCA), the optimal standards for minerals needed to make the perfect cup of coffee, include: recommendations for total hardness, carbonate hardness, and pH balance. Perfectly pure water such as distilled, RO, or RODI are ideal for certain applications but not necessarily for making coffee. Over-mineralized water, hard water, or water that has been softened with salt, can all make your cup of heaven taste like it’s had better days. Carbonates are the kings of water for brewing coffee because they help to keep your pH stable. In cases where there is too much carbonate content, the positive acidity in taste will be flushed away, which produces dull flat coffee. In a case where the carbonate content is too low, the coffee will be sour and taste strongly of vinegar.

A small amount of buffer should always be present.
